Blackcurrants

The intense fruitiness of blackcurrants as jam, sorbet or ice cream is a blessing in the cold parts of the year. They're easy to grow and care for, and the birds seem to leave them alone. Bags of frozen blackcurrants in the freezer is a great resource and the starting point to any number of life affirming puddings. More »

Chickweed – a mildly annoying weed to gardeners and allotmenteers, as it spreads rapidly across cultivated soil but is also easily removed – turns out to be full of vitamins and minerals, as well as being a recognised medicinal herb with healing and cleansing properties.* More »

Elderflower and Gooseberries

The elder tree blooms from mid May through to early July – big saucer-shaped clusters of tiny flowers. You’ll find them in almost every hedgerow. More »

Nettle Soup

Very easy, very nutritious and a pleasant treat that marks the coming of the spring. You only want young nettle heads, so these are best picked in March and April. Use gloves and fill half a carrier bag . This will give you enough nettles for soup for four. More »

Rhubarb and ginger jam

The flavours of rhubarb and ginger work really well together – warm, spicy and fruity. So this is a delicious jam, great on toast and brilliant as a sauce for sponge puddings. Comfort food for cold and rainy days. More »

Snails

Common brown snails, the sort you find in the garden, can be just about worth eating but you have to put in time and a lot of extra flavour to make a worthwhile dish – but with the benefit of managing the numbers of molluscs in your garden during the early growing season (April-June), it might be worth the effort.
